Welcome back to your Thursday evening introduction to a few of the incredibly talented Pensacola Eggfest Cook Teams. Personally, it’s been a pleasure getting to know the new teams and learning what the returning teams have up their sleeves this year to wow the crowd.
This next cook team is well known in our hometown and is part of the Pensacola foodie scene no doubt. Known for delicious burgs and those fried brussels (to die for), meet Ellis from Brown Bagger Food Truck. His mission is to serve exceptional food consistently while having fun and giving back while doing it. They only source superior ingredients and their goal is to provide a burger experience for their customers to get lost in. While Ellis, “has food truck, will travel” he has taken up residency at Alga Beer Company on 12th Avenue in East Hill.

Ellis and his team are making their Pensacola Eggfest debut and there were three cheers from the Pensacola Eggfest organizers when they saw his registration come through.
What you might not know about Team Brown Bagger:
Their secret ingredient: “How can the competition know what we are doing if we don’t even know?” (Sounds like this might be one of those late night, had a few beers, let’s try this kind of recipe and I’m here for it!)
If they could only cook with one ingredient: “Give me garlic. Roasted, raw, powder, or black garlic, it enhances everything.”
The most unexpected dish you’ve cooked on the Big Green Egg: “Personally, I haven’t used a Big Green Egg before so this competition’s dish is unexpected.”
Their best BBQ fail or mishap: “I’m sure everyone has been through it, one cocktail too many and I fell asleep while a pork butt was on the smoker. Woke up to ash and pork jerky…pretty sure we had pizza that day.”
If Team Brown Bagger could have one famous person (current or historical) on their cook team it would be: “Flava Flav… everyone needs a good hype man plus that clock can help us with timing.”
The Smack Talk: “We aren’t looking to beat anyone except for one team….they know who they are.”

Pensacola Eggfest will take place at Noon (or earlier if you snag one of the 8 VIP tickets left as of 10/31/24, 4:30pm), Sunday November 10th, 2024, at Hadji Temple, 800 W 9 Mile Rd, Pensacola, FL 32534 . The event hosts BBQ teams and backyard cooks from all over the United States who share two things: a love of cooking and the joy of giving back to their communities. Since 2013, over $780,000 has been donated to local charities from this little BBQ party and the Pensacola Eggfest team is ready to push it over the $1 million mark with your help. This year, our number of cook teams have surpassed all other years so come hungry!
