The newly opened taproom and cocktail bar is now featuring a curated raw oyster menu and late night happy hour cocktail menu, plus announces new Fall hours

The Well, a vintage Florida-style taproom and cocktail lounge that opened earlier this summer in the East Garden District of downtown Pensacola has introduced a raw oyster program to complement its curated cocktail and beer menus. Local chef Amy Potmesil was enlisted to develop a unique raw bar program offering an outstanding selection of oysters spanning from Maine and Washington to our local waters along the Gulf Coast including our neighbors in Alabama, Louisiana, and Mississippi.

RAW OYSTER PROGRAM

Potmesil and her culinary team will be shucking to order 3-5 varieties of fresh oysters at a dedicated raw bar station at the far end of The Well’s expansive oak-paneled bar. The oyster presentation is complemented with housemade Fermented House Hot Sauce, Sour Beer Mignonette, Horseradish, Kimchi Cocktail Sauce, and Lemon Pearls. The oyster selection will change weekly, often daily, to serve patrons the freshest seafood of the moment. The select menu, available Thursday-Saturday at opening until one hour before closing, will be announced on The Well’s social media channels and featured on a vintage framed mirror next to the raw bar station. Orders can be placed in increments and priced per oyster at MP.

“I found inspiration in the beer fermentation process already utilized at the bar and incorporated it into the housemade garnishes served alongside each oyster presentation,” said Potmesil. “For example, the sour beer mignonette features The Well’s Golden Embers sour beer complimented by malt vinegar for an extra acidic punch. I also created a signature hot sauce using red Fresno chilies that I ferment with vinegar for two weeks. This gives the hot sauce a bit more complexity.”

LATE NIGHT HAPPY HOUR MENU

Additionally, The Well has added a “Late Night Happy Hour” menu that features three specialty cocktails and the bartender’s choice of draft beer. Each beverage is available for $8. The featured cocktails include: Boozy Old Fashioned, French 75, and Classic Daiquiri. The late night happy hour menu is available Sunday-Wednesday from 8 pm – 10 pm.
